A few weeks ago, my friend, Erica, discoverd a healthy + amazingly yummy alternative to ice cream. I love ice cream (who doesn’t?) but it doesn’t really contribute to wholesome healthy eating but this…this is healthy + delicious!
Soft Serve Banana Ice Cream
Makes 1/2 cup
Take one banana, peel it, and cut it into chunks and put it in a ziplock and into your freezer. Leave for at least 12 hours (otherwise it is too soft).
Remove the banana from the freezer and throw it into your blender. Add a dash of milk/almond milk/soy milk (just to make it blend). Blend until it is smooth.
The consistency of the blended banana is just like soft serve ice cream (I swear!) and, for those of you who don’t love the taste of bananas, don’t worry, somehow in the process, the banana taste because quite faint.
For alternatives try: throwing blueberries or strawberries on top, adding a tablespoon of your favorite nut butter (peanut butter + almond butter both taste great), or add a bit of peanut butter + some nutella (that combiniation is so yummy) or even throw in a few chocoalte chips.
Try it! It tastes great + you don’t have to feel guilty eating it because it is fruit!
